White Apricot French Toast

This Mother’s Day calls for something special. With restaurants still closed, why not make something simple and delicious for your Mum in the comfort of your home. Our White Apricot French Toast will have your Mum praising you.

Recipe for 2 people

Ingredients:

  • 6 slices brioche bread
  • 6 tbsp butter
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla essence
  • 2 eggs
  • 20g boiled water
  • 5g Camellia’s White Apricot tea
  • 2 tbsp creme fraîche
  • 1 tbsp golden syrup
  • 10g flaked almonds
  • 5g icing sugar
  • Edible flowers for decorating

Method:

  1. Put 5g of the loose-leaf tea in a mug then add the boiled water. Brew for 3-4 minutes.
  2. Strain majority of the water out of the mug- leaving a little water and all the tea leaves.
  3. In a small bowl place the 6tbsp butter and the wet tea leaves and mix. Place into the fridge for 30 minutes. The tea leaves will infuse the butter. The longer you leave it to infuse, the richer in taste it will be.
  4. In a large bowl, crack and beat the eggs, add the sugar, cinnamon and vanilla – mix together.
  5. Take the infused butter out the fridge and butter both sides of each slice of bread.
  6. Heat a pan with a nob of butter then dip a slice of the buttered bread into the egg mix on both sides and place into the pan. Fry each side of the bread for roughly a minute.
  7. Repeat the process until each slice of bread has been fried.

Plating:

  1. Take two small plates and stack 3 slices of the French Toast on each plate.
  2. Drizzle some golden syrup over the top slice of French Toast on each plate and dust some icing sugar.
  3. Put 1tbsp of creme fraîche on top and sprinkle some almond flakes.
  4. Decorate the dish with vibrant edible flowers for a beautiful finish.
