Green tea dates back to Ancient China and it was the very first type of tea to be produced. Over the centuries it has spread to other countries, but the best varieties of green tea traditionally come from China and Japan.

The leaves are carefully plucked and then dried using heat, either by steaming (Japan) or by pan-firing (China), with each process resulting in a different character of the teas.
